About update statistics

Hi everybody,
If i run "update statistics"
I supose the update is done for the entire database,
Is it done in High, low or medium mode?

By the way, I have heard about a script that generates
the update statistics script for each field
on every table on a database (distributions only).

Would somebody has a script like this or know where to find it?
